Grilled Summer Bruschetta Chicken Dinner

Coming up with a quick tasty meal can sometimes be harder than it should be. We tend to over thing the simplest ingredients. Have you ever invited someone special to your house and not know what to cook them for dinner?

You don't want to try too hard and have them thinking you have spent hours preparing. But you also don't want to serve up a ham and cheese sandwich.

Well here is a chicken recipe that won't disappoint them!

Ingredients: (Serves 4)

4 Pieces of chicken breast

2 Tomatos

6-8 Basil leaves

8 Buffalo mozzarella slices

5 Whole potatoes

10 Whole mushrooms

25 Baby carrots

Salt & pepper to taste

Paprika & onion powder to taste

Balsamic glaze

Instructions:

Before hand, soak tooth picks in water to prevent from burning on the grill.

Cut the tomatos, basil leaves and add a pinch of salt and pepper and mix together in a bowl.

 

Meanwhile cut and season the vegetables and wrap them in foil.

 

Slice the chicken breast in half.

Fill each chicken breast with cheese and tomato mixture.

Close each piece of chicken securing it with the toothpicks.

Start cooking the vegetables 25-35 minutes before the chicken. The vegetables take the longest, you want everything to be done cooking at the same time! Then, add the chicken onto the grill and cook for another 30 minutes taking into consideration the thickness of it. When the chicken is almost done cooking, drizzle with Balsamic glaze. (Which of course we forgot at the house, oops!)
