S'more Parfait by F.I.G.

With Winter around the corner I can't help but think about missing the summer days. Luckily I will be spending the holidays on the island I call home, Puerto Rico. I'm missing summer recipes and the cold weather is making me think about all of the memories I made this summer. I loved this S'more's recipe so much I had to share.

Hello Everyone!!

 This recipe was inspired by a summer time favorite "The S'more". I decided to turn this American summer time favorite into a parfait with a delicious chocolate pastry cream. I layered the pastry cream on the bottom with heath bar bits and gram cracker crumbles on top beneath gooey yummy marshmallows!

This decadent yummy dessert is sure to be a crowd pleaser at your next summer bash!

S'more Parfait

S'more Parfait



Pastry Cream:

1 Cup of milk

1/3 Cup of sugar

Pinch of salt

1 Tablespoon of cornstarch

1 Teaspoon of cake flour

1 Egg

1 Egg yolk

1 Teaspoon of butter

1/2 Teaspoon vanilla

1/3 cup of melted Chocolate


1/2 Cup crumbled gram crackers

1/2 Cup heath bar bits



Pastry Cream:

Melt chocolate over a double boiler and set aside.

Scald 2/3 of the milk with 1/2 the sugar.

Whisk together egg yolks, eggs, and remaining milk.

Combine sugar and cornstarch and add to egg mixture.

Temper milk mixture into the egg mixture. Return the mixture to the heat and bring to a boil. Remember to constantly whisk the mixture, boil for about 3 minutes until the pasty cream is a pudding like consistency!

Remove from heat and stir in melted chocolate butter and vanilla.


In individual cups layer the chocolate pastry cream, crumbled gram crackers, heath bar bits and then the marshmallows on top.

Torch the marshmallows until golden brown!
